When fall arrives, my menu planning always includes one night each week when we enjoy a soup, stew, or a hearty bowl of chili. Last week I shared my Make-ahead Chicken Soup Base. Last week, I made a batch of soup base and used half of it to make a yummy dinner of Chicken and Dumplings. This week, I pulled the other half out of the freezer and added a few ingredients to make a delicious Chicken Tortilla Soup.
This soup recipe is quick and easy. I served it with crunchy tortilla chips and a green salad. It’s a fast, tasty fall meal.
